I don't like having to eat around the rib bones. I want one nice solid chunk of boneless meat.

I filet all my perch as well. I think the time it takes to pick meat off bones after cleaning then cooking ends up being higher than if you were to just filet them from the start.

thats how i learn to clean a perch, we call it hog dressing them....
but now a electric fillet knife is the way to go, fast and nothing but meat....

I've cleaned them like that for years and also cut off the belly meat.The rest of the bones stay attached to the backbone. Roll in milk and bread crumbs, fry in butter Crisco, Garlic salt and pepper. Meat falls off the bones. No fear of loose bones. Hell, I just got a huge urge to go ice fishing. Nothing beats a yellow belly flopping around in the pan along with fried fish egg.
