My 11 year old has been beating up the white perch...so we filleted a cooler of them instead of driving to Ray's, and they were excellent...
Cajun shore lunch, mixed with 1/2 cup of white milk, creates a wet mix...dip fillets, and deep fry in peanut oil...they will float to the top when they are done.....quick and easy, and pretty tasty..they were a huge hit at a 4th of July bbq....many seasoned fisherman could not believe they were white perch...!
