Lime Broiled Lake Trout

The recipes board has been quiet for 3 years ! Since there was a question about lake trout being any good to eat -

I really like baked/broiled lake trout. This is an improvised recipe due to stores being out of many things these days, but it turned out to be better than the old standby recipe.

1 lake trout (20” to 28” tastes best) filleted with skin removed
sesame oil
2 limes
3½ tablespoons buttermilk
½ teaspoon coarse sea salt (less for fine-grain or table salt)
2 shallots (or 1 small onion and 1 clove garlic)
1 to 2 TBSP minced celery

- Preheat oven to 375°F.
- Line baking pan with aluminum foil, leave enough extra foil to wrap around & cover fish
- lightly coat foil w/ the oil
- slice lime as thin as possible and arrange on the foil
- Finely mince shallots and celery
- Wash fillets and pat dry
- place fillets on the lime slices
- drizzle oil lightly over the fillets
- scatter the minced veggies and salt over the fillets then drizzle the buttermilk over them
- fold foil over fillets to enclose completely. Leave a little room under foil for air circulation
- Bake 30 minutes at 375°F until fish is almost completely cooked through at its thickest part
- remove fish from oven, open foil to uncover top of fillets
- set oven to high-broil and broil the fish 3 to 6 minutes until top is slightly golden and fillet is cooked through
I do not exaggerate when I talk about fishing - I underestimate, like I say "just one more cast honey, then I'll come home" !

I'm trying it tonight with a 24" laker I caught in Lake Sebago today.
