White perch?

Any of you New Hampshire or Manie fisherman have any secrets on how to cook these pesky perch up?

Egg wash Italian bread crumbs hot oil bath (don't over cook!) just like candy :D :D :D

rub with garlic, egg wash, panko light breading, fry in crisco shortening till golden brown, wipe drool off chin and eat!

Flour, egg wash, and pancake mix. Fry fillets at around 325 untill golden brown. Don't forget to salt when it's still hot.

I soak in milk, then roll in flour flour before the egg wash, then seasoned Panko. So good!!!

Dave "CRABMAN" smoked some for me .

Just with salt and a bit of sugar, dry rubbed then rinsed and dried. Smoked with skin on but scaled kept them nice and moist.

He would make those Brooklyn Jewish Guys Proud !
