Smoked Salmon Spread

Salmon Spread
This simple and easy to assemble spread is a seasonally expected offering at our home.

1 package cream cheese, softened

4 green tail onions, chopped

8 ounces smoked salmon, broken up

3 shots Tabasco sauce

1 teaspoon Worcestershire sauce

2 tablespoons cream

1 tablespoon fresh lemon juice



Instructions

Sautę chopped green tails until soft. Blend all into cream cheese that cream has been added . Set aside several hours to allow flavors to develop.

Smoked 15 lbs of salmon on Saturday after starting the brine Friday morning. I made 13 gift bowls of Randy's Salmon Spread plus 1 large one for our own Christmas Eve celebration. I still have about 4 lbs of smoked salmon left, though I heard discussion of cutting it into eggs on Christmas day! I'm curious... Randy you set yours aside for several hours, but I add a raw egg (and adjust the ingredients) and bake it for about 30 minutes. HAve you tried that? It's best warm!

Scott you were busy in the kitchen. and the recipients of your gifts were surely pleased.

My take on your recipe with egg was to take it a bit further {easy though} with individual Smoked salmon souffles as a dinner party course.

Just bringing this one back forward! Randy has done a ton for me and the Champlain Frostbite Fleet, but this is my every year treasure! We host Christmas Eve dinner for several close families, and the kids have grown (and now expect) smoked salmon dip. What started as a small gesture now includes many "take home" servings and personal small bowl and gift favors." I'll be busy on the smoker this weekend getting ready! Thanks RANDY!! Fish ON!!
