Salmon on the grill

Post by squaretail »

I thought I would start a post here on the subject of grilling fish. I know, everybody has there own special recipe for this and I want to hear them all.
I have been cooking them the same way for some time, and always turns out ok but I am not a chef!
So here's how I do it...
1. (the hard part) - catch a salmon, clean, filet etc...
2. wrap the filets in aluminum foil with some salt, pepper and olive oil.
3. heat up the BBQ and cook 6 minutes flip & cook 6 minutes more.

This is my favorite salmon on the grill recipe:
3 (12 inch) untreated cedar planks
1/3 cup olive oil
1 1/2 tablespoons rice vinegar
1 teaspoon sesame oil
1/3 cup soy sauce
1/4 cup chopped green onions
1 tablespoon grated fresh ginger root (very important it's fresh!)
1 teaspoon minced garlic
2 lbs salmon fillets

Soak the cedar planks for at least 2 hours
In a shallow dish, stir together the olive oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, longer if possible
Preheat your grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
Place the salmon fillets onto the planks. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.
BE CAREFUL if you don't soak the cedar planks long enough they will burn... Learned that the hard way...
To fish or not to fish... NOT TO FISH??? Like that's even a question!!!!

I don't put much on it. But I do get some fresh lemon, cut them in slices, and put the lemon on the grill, then put the salmon on the lemon. The salmon doesn't stick to the grill, and picks up a bit of a lemon flavor. Can't remember where I read about that, but I like it.
