Salmon on Leeks & Carrots

Salmon On Leeks, Carrots

pounds Atlantic salmon, filets

2 1/2
cups leeks, cut in slices

2 1/2
cups carrots, julienned

16
ounces apple cider

1
teaspoon apple cider vinegar

tablespoon honey

tablespoons dijon mustard

sprig fresh rosemary

sprig fresh thyme

cup oyster cracker, crushed

stick butter, melted
 
Instructions
Add cider, vinegar, honey, mustard & herbs to a small saucepan and simmer until reduced to 1 cup. Remove herbs. Add to a ovenproof frypan with lid  mixed carrots and leeks. Top with salmon fillet and pour over pan sauce. Cover and simmer for 15 minutes. Meanwhile preheat broiler, melt butter and coarsley crush crackers. Remove lid, top fillet with crackers and pour butter on top. Put under broiler 3-5 minutes to brown. Serve .
