Goose Hunts!

We have been hunting before work and getting a few here and there. Not the big flocks like over in New York but they are around.

We started on the water but have moved to the fields now.

How do you cook them? Last time I shot and cooked one up, it tasted like crap! And I consider myself to be a pretty decent cook!

The key to cooking is not to overcook it. Just like venison. Overcooking is bad!!! I have ruined many in the crop pot of all things. A good way is cook butter n onion and add cream mushroom soup n milk to a boil. Then cut breast in chunks add them and simmer just until tender. Oven roasting is killer too. My buddy is wet smoking a bunch of the breasts this weekend. Those are fantastic! :D

Nice work, I miss the goose fields. Whats wet smoking, we brine and smoke duck breasts and everybody loves it. You can't leave it out at work or it's all gone. Come on Oct. :D
