My inspiration last nite was to top the fillet with lemon herb mayonnaise and bread crumbs and make spicy sweet potato fries.
Any skinless fillet. Mix 1/3 cup mayonnaise, 2 tablespoons chopped fresh parsley, 2 cloves minced garlic, 2 tablespoons fresh lemon juice, 1 teaspoon minced lemon zest, 1-2 grinds of black pepper. Preheat oven to 400 degrees. Top fillet with mix, sprinkle with fresh bread crumbs
Bake 12-15 minutes depending on fillet.
Spicy sweet potato fries: Peel and cut sweet potato into fries. add to mixing bowl a couple tablespoons of canola oil. Add fries to coat and dump on a foil lined cookie sheet. Sprinkle with your favorite hot spice. I use a Kansas City rub with extra Chipolte pepper flakes added and bake 12-15 minutes.
Sprinkle with salt and Enjoy with the fish.
